Ingredients
- 1 cup cooked beans (black beans or chickpeas)
- 1–2 cups leafy greens (spinach, kale, or arugula)
- 1 tbsp olive oil
- 1 tbsp lemon juice or vinegar
- Salt and pepper
Directions
Step 1
1. Warm beans in a pan or microwave. 2. Lightly sauté greens in olive oil until wilted (or leave raw). 3. Combine beans and greens in a bowl. 4. Drizzle with lemon juice or vinegar. 5. Season with salt and pepper and serve.
